Salmon Patties (Low-Carb, High-Protein)
Crispy, herby salmon patties with feta, spinach, and no breadcrumbs—perfect for low-carb diets!
Ingredients
For the Patties:
2 cans (6 oz each) wild salmon, drained and flaked
1 cup fresh spinach, chopped (or ½ cup thawed, squeezed frozen spinach)
¼ cup red onion, finely chopped
2 cloves garlic, minced
⅓ cup crumbled feta cheese
2 large eggs
2 tbsp fresh parsley, chopped
1 tbsp fresh dill (optional)
1 tbsp lemon juice
1 tsp lemon zest
1 tsp dried oregano
Salt and pepper, to taste
For Cooking:
Olive oil for frying
Optional Garnish:
Lemon wedges
Tzatziki sauce (low-carb, if desired)
Instructions
Prep the Salmon:
Drain salmon and flake with a fork. Remove bones and skin if needed.
Sauté the Spinach:
In a dry pan, wilt the spinach for 1–2 minutes. Let it cool, then squeeze out moisture.
Mix the Patties:
In a bowl, combine salmon, spinach, onion, garlic, feta, eggs, herbs, lemon juice, zest, oregano, salt, and pepper. Mix well.
Shape:
Form into 6–8 patties. If the mix feels too loose, chill for 10–15 minutes to firm up.
Cook:
Heat olive oil in a skillet over medium heat. Cook patties for 3–4 minutes per side until golden and cooked through.
Serve:
Serve warm with lemon wedges and a spoon of tzatziki or plain Greek yogurt.
