Chicken & Veggie Power Bowl with Brown Rice
A nourishing and flavorful dish featuring seared chicken, tender-crisp vegetables, and fluffy brown rice — all tossed in a light savory glaze. This balanced bowl is high in protein, fiber, and deliciousness!
Ingredients
For the Chicken:
1 chicken breast or thigh (about 6 oz)
1 tsp olive oil
½ tsp paprika
¼ tsp garlic powder
Salt & pepper to taste
For the Veggies:
½ cup sliced bell peppers (red, yellow, green)
¼ cup broccoli florets
¼ cup zucchini slices
¼ cup carrot sticks
¼ cup green beans
1 tsp olive oil
Salt & pepper to taste
For the Sauce (optional but delicious):
1 tbsp soy sauce
½ tsp honey or maple syrup
½ tsp lemon or lime juice
¼ tsp chili flakes or black pepper
For Serving:
½ cup cooked brown rice
Directions
Cook the Brown Rice:
Cook according to package instructions. Fluff and keep warm.
Cook the Chicken:
Season chicken with paprika, garlic powder, salt, and pepper.
Heat olive oil in a skillet over medium heat and sear chicken 4–5 minutes per side, until golden and cooked through.
Remove and slice.
Sauté the Veggies:
In the same pan, add a touch more olive oil.
Toss in bell peppers, zucchini, carrots, broccoli, and green beans.
Stir-fry 4–5 minutes until tender-crisp.
Add salt and pepper to taste.
Add the Sauce:
Mix soy sauce, honey, lemon juice, and chili flakes in a small bowl.
Pour over the veggies and chicken, tossing gently to coat.
Assemble the Bowl:
Place brown rice at the base of the bowl, top with chicken and veggies, and drizzle any remaining sauce over the top.
