🥐 Mom’s Homemade Cream Puffs (High-Protein)

🍽️ Makes: 10–12 cream puffs


📝 Ingredients

Choux Pastry (shells)

  • 1 cup water

  • 4 tbsp butter

  • 1 tbsp sugar or sugar-free sweetener

  • ½ tsp salt

  • 1 cup all-purpose flour (or ¾ cup flour + ¼ cup protein powder for extra protein)

  • 4 large eggs

High-Protein Cream Filling

  • 1 cup cottage cheese

  • ¾ cup plain Greek yogurt

  • 1 scoop vanilla protein powder

  • 2–3 tbsp powdered sweetener or powdered sugar

  • 1 tsp vanilla extract

  • 2–4 tbsp milk (to thin)


👩‍🍳 Instructions

1) Make the shells

  1. Preheat oven to 400°F (200°C). Line a baking tray with parchment.

  2. In a saucepan, bring water, butter, sugar, and salt to a boil.

  3. Remove from heat. Stir in flour (and protein powder if using) all at once.

  4. Return to heat and stir 1–2 minutes until a dough ball forms and pulls from sides.

  5. Let cool 5 minutes.

  6. Beat in eggs one at a time until smooth and glossy.

  7. Pipe or spoon 10–12 mounds onto tray.

  8. Bake 20 minutes, then reduce to 350°F (175°C) and bake 10 more minutes until golden and puffed.

  9. Cool completely.

2) Make the filling

  1. Blend cottage cheese, Greek yogurt, protein powder, sweetener, vanilla, and milk until silky smooth and thick.

  2. Chill 20–30 minutes to firm up.

3) Fill

  • Slice puffs in half or poke a hole underneath.

  • Pipe or spoon in the cream.

  • Dust with powdered sweetener if desired.
