📝 Ingredients

Base

  • 1½ cups cooked chicken breast, shredded

  • ½ cup cottage cheese

  • ½ cup shredded cheddar cheese

  • 2 large eggs

  • ½ cup almond flour (or oat flour for a lighter version)

  • 1 scoop unflavored protein powder

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • Salt & pepper to taste

Topping (Optional)

  • Extra shredded cheese

  • Chopped parsley or chives


👩‍🍳 Instructions

  1. Preheat oven to 375°F (190°C). Line a mini muffin tin with parchment cups or lightly grease.

  2. In a bowl, combine shredded chicken, cottage cheese, cheddar, eggs, almond flour, protein powder, garlic powder, onion powder, salt, and pepper. Mix until well combined.

  3. Scoop mixture into mini muffin tin (about 2 tbsp per bite). Press slightly to compact.

  4. Optional: sprinkle extra cheddar on top.

  5. Bake 18–22 minutes until golden and set.

  6. Let cool 5 minutes before serving.
