  • 2 large eggs

  • ¼ cup unsweetened applesauce or Greek yogurt

  • ¼ cup melted coconut oil or butter

  • 2–3 tbsp sweetener (erythritol, monk fruit, or sugar)

  • 1 tsp vanilla extract

Optional Mix-Ins

  • 2 tbsp dark chocolate chips (sugar-free optional)

  • 2 tbsp chopped nuts (walnuts, pecans)
