Stuffed Chicken Rolls
High Protein | Low Carb | Creamy & Flavorful
Ingredients:
1 lb chicken breast, sliced thin
1/2 cup spinach, chopped
1/2 cup roasted red peppers, diced
1/2 cup mozzarella or cream cheese
Salt & pepper to taste
1 tbsp olive oil
Fresh parsley, chopped for garnish
Instructions:
Preheat oven to 375°F (190°C).
Lay chicken slices flat and season with salt and pepper.
Spread spinach, roasted peppers, and cheese evenly on each slice.
Roll up the chicken tightly and secure with toothpicks if needed.
Heat olive oil in a skillet and sear chicken rolls on all sides until golden.
Transfer to baking dish and bake for 20-25 minutes until cooked through.
Garnish with fresh parsley and serve hot.
