Here’s a high-protein, low-carb version of a classic Envelope Roast — the roast cooks in a flavorful packet (“envelope”) in the oven or slow cooker, keeping it tender and juicy.

✅ Ingredients (4–6 servings)

  • 2–3 lb (900–1350 g) lean beef roast (chuck or round)

  • 1 tbsp olive oil

  • 1 tsp salt, ½ tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp dried thyme or rosemary

  • 1 small onion, sliced

  • 2 cloves garlic, minced

  • 1 cup low-sodium beef broth

  • Optional: ½ cup mushrooms, sliced

  • Optional: 1 tsp Worcestershire sauce


🔥 Instructions

  1. Preheat oven to 350°F (175°C).

  2. Prepare “envelope”: Use heavy-duty foil to create a packet large enough to hold the roast and vegetables.

  3. Sear roast (optional): Heat olive oil in a skillet, sear roast 2–3 minutes per side for extra flavor.

  4. Assemble packet: Place roast on foil, season with salt, pepper, garlic powder, onion powder, and thyme. Add onion, garlic, mushrooms, and drizzle beef broth (and Worcestershire if using).

  5. Seal tightly into an “envelope.”

  6. Bake: 2–3 hours (depending on roast size) until meat is fork-tender. Check halfway and add extra broth if needed.

  7. Remove from oven, let rest 10 minutes, then slice. Serve with pan juices.
