🛒 Ingredients (Makes 12 cookies)

  • 1 cup oat flour (or finely ground oats)

  • ½ cup chocolate or vanilla whey protein

  • 2 tbsp unsweetened cocoa powder

  • ¼ tsp salt

  • ¼ tsp baking soda

  • 2 large eggs

  • ½ cup unsweetened applesauce (or melted coconut oil)

  • ¼ cup Greek yogurt (nonfat)

  • 2–3 tbsp sweetener of choice (stevia, erythritol, or sugar)

  • ½ cup sugar-free chocolate chips

Optional add-ins:

  • 1 tsp vanilla extract

  • 1 tbsp peanut butter (for extra flavor)


👩‍🍳 Instructions

  1. Preheat oven to 175°C (350°F). Line a baking sheet with parchment paper.

  2. In a bowl, whisk together oat flour, protein powder, cocoa powder, salt, and baking soda.

  3. In another bowl, beat eggs, applesauce, Greek yogurt, sweetener, and vanilla (if using).

  4. Combine wet and dry ingredients. Fold in chocolate chips.

  5. Scoop 2–3 tbsp of dough per cookie onto baking sheet. Flatten slightly.

  6. Bake 10–12 minutes until edges are set but centers remain soft.

  7. Cool 5–10 minutes before serving (cookies will firm up).
