Ingredients (1 large serving)
1½ cups cooked shredded chicken breast (0 points)
1 cup raw broccoli, chopped (0)
½ cup red bell pepper, chopped (0)
½ cup cucumber, chopped (0)
Creamy Dressing:
2 tbsp nonfat plain Greek yogurt (0)
1 tbsp light mayonnaise (1 point)
1 tsp Dijon mustard (0)
1 tsp lemon juice (0)
¼ tsp garlic powder
Salt & pepper to taste
Instructions
Combine ingredients:
Place chicken, broccoli, bell pepper, and cucumber in a large zip-top bag or bowl.
Mix dressing:
In a small bowl, whisk together Greek yogurt, light mayo, Dijon mustard, lemon juice, garlic powder, salt, and pepper.
Assemble salad:
Pour the dressing over the chicken and veggies.
Toss or shake:
Seal the bag or mix in the bowl until everything is evenly coated.
