🍌 High-Protein Cottage Cheese Banana Bread

Moist, naturally sweet, and packed with protein — thanks to blended cottage cheese and optional protein powder. Perfect for breakfast or a post-workout snack.


📝 Ingredients (1 loaf – 8–10 slices)

  • 3 ripe bananas, mashed

  • 1 cup cottage cheese (blend until smooth)

  • 2 large eggs

  • ¼ cup maple syrup or sugar-free sweetener

  • 1 tsp vanilla extract

  • 1½ cups oat flour (or blended rolled oats)

  • 1 scoop (30g) vanilla protein powder

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ½ tsp cinnamon

  • Pinch of salt

  • ¼ cup mini dark chocolate chips or chopped walnuts (optional)


👩‍🍳 Instructions

1️⃣ Preheat oven to 350°F (175°C).
Grease or line a 9×5 loaf pan.

2️⃣ Blend cottage cheese until completely smooth.

3️⃣ In a large bowl, mix bananas, blended cottage cheese, eggs, maple syrup, and vanilla.

4️⃣ Stir in oat flour, protein powder, baking soda, baking powder, cinnamon, and salt.

5️⃣ Fold in chocolate chips or nuts if using.

6️⃣ Pour batter into loaf pan and smooth top.

7️⃣ Bake 45–55 minutes until a toothpick comes out clean.

8️⃣ Cool at least 15 minutes before slicing.

Whole loaf = about 95–110g protein


💪 Make It Even Higher Protein

  • Replace ¼ cup oat flour with extra protein powder.

  • Top slices with Greek yogurt + nut butter.
