Chicken Spinach & Mushroom Low-Carb Oven Dish
Ingredients

2 lb (900 g) chicken breast or thighs, cubed

2 tbsp olive oil or butter

8 oz (225 g) mushrooms, sliced

3 cups fresh spinach

3 cloves garlic, minced

1 cup heavy cream

½ cup chicken broth

1 cup shredded mozzarella or Swiss cheese

½ cup grated Parmesan

1 tsp Italian seasoning

½ tsp paprika

Salt & black pepper to taste
Instructions

Preheat oven to 375°F (190°C). Grease a baking dish.

Sauté vegetables:
Heat oil in a skillet. Cook mushrooms until golden. Add garlic and spinach; cook until wilted. -
Season chicken:
Toss chicken with salt, pepper, paprika, and Italian seasoning. -
Assemble:
Spread chicken in baking dish. Top with mushroom-spinach mixture. -
Make sauce:
Mix cream and broth. Pour evenly over chicken. -
Add cheese:
Sprinkle mozzarella and Parmesan on top. -
Bake uncovered for 30–35 minutes, until bubbly and chicken is cooked through.
