1 lb (450 g) ground beef (or ground turkey)

1 can (14.5 oz / 400 g) diced tomatoes (no sugar added)

2 tbsp tomato paste (optional; skip for very low carbs)

4 cups beef broth

1 tsp paprika

1 tsp Italian seasoning

½ tsp cumin

Salt & black pepper, to taste

1 cup cauliflower rice

Instructions

In a large pot over medium heat, brown the ground beef. Drain excess fat if needed.

Add onion (if using) and cook 2 minutes until soft.
