Stuffed Pepper Soup

Here’s a hearty, comforting Keto Stuffed Pepper Soup—all the flavors of stuffed peppers without the carbs 🌶️🥣

Ingredients

  • 1 lb (450 g) ground beef (or ground turkey)

  • 1 tbsp olive oil (if meat is lean)

  • 1 small onion, finely diced (optional for stricter keto)

  • 3 bell peppers (red & green), chopped

  • 3 cloves garlic, minced

  • 1 can (14.5 oz / 400 g) diced tomatoes (no sugar added)

  • 2 tbsp tomato paste (optional; skip for very low carbs)

  • 4 cups beef broth

  • 1 tsp paprika

  • 1 tsp Italian seasoning

  • ½ tsp cumin

  • Salt & black pepper, to taste

  • 1 cup cauliflower rice

  • Fresh parsley or basil for garnish

  • Optional: red pepper flakes


Instructions

  1. In a large pot over medium heat, brown the ground beef. Drain excess fat if needed.

  2. Add onion (if using) and cook 2 minutes until soft.

  3. Stir in garlic and bell peppers, cook 3–4 minutes.

  4. Add diced tomatoes, tomato paste, broth, and spices.

  5. Bring to a simmer, cover, and cook 15 minutes.

  6. Stir in cauliflower rice and cook another 5 minutes.

  7. Adjust seasoning and serve hot.


Optional Toppings (Keto-Friendly)

  • Shredded cheddar or mozzarella 🧀

  • Sour cream

  • Fresh avocado

  • Parmesan cheese
