🥩 Keto Philly Cheesesteak Roll-Ups

Ingredients

  • 1½ lb (680 g) thinly sliced beef (ribeye, sirloin, or shaved steak)

  • 1 tbsp olive oil or avocado oil

  • 1 green bell pepper, thinly sliced

  • 1 small onion, thinly sliced (optional for strict keto)

  • 8 slices provolone cheese (or mozzarella)

  • 2 cloves garlic, minced

  • Salt & black pepper, to taste

  • ½ tsp smoked paprika (optional)


Instructions

  1. Preheat oven to 375°F (190°C).

  2. Heat oil in a skillet over medium-high heat.

  3. Sauté peppers and onions until soft and lightly caramelized. Remove and set aside.

  4. In the same skillet, add beef, garlic, salt, pepper, and paprika. Cook just until beef is no longer pink.

  5. Lay cheese slices flat on a parchment-lined baking sheet.

  6. Divide beef mixture onto cheese, top with peppers & onions.

  7. Roll tightly and place seam-side down.

  8. Bake 8–10 minutes, until cheese melts and roll-ups hold together.

  9. Rest 2 minutes before serving.
