Ingredients

1 lb ground beef (or ground turkey)

1 tbsp olive oil (if needed)

1 small onion, finely chopped (optional)

2 cloves garlic, minced

1 packet keto-friendly taco seasoning
(or 1½ tbsp homemade – no sugar) -
½ cup sugar-free salsa

1 cup cauliflower rice, cooked & drained well

1 cup shredded cheddar cheese
-
1 cup shredded Monterey Jack (or mozzarella)

4 oz cream cheese, cubed

¼ cup sour cream
-
Salt & pepper to taste
Optional toppings

Sliced jalapeños

Green onions

Black olives (small amount)

Fresh cilantro
Instructions

Preheat oven to 375°F (190°C).

Brown beef in skillet with onion and garlic until fully cooked. Drain excess fat.

Add cauliflower rice, salt & pepper, and mix well.
