Here’s a Keto Stuffed Pepper Casserole that has all the classic flavors—without the carbs 🌶️🧀

🌶️ Keto Stuffed Pepper Casserole

Ingredients

  • 1 lb ground beef (or ground turkey)

  • 1 tbsp olive oil (if needed)

  • 1 cup bell peppers, diced (green, red, or mixed)

  • ½ small onion, finely chopped (optional)

  • 2 cloves garlic, minced

  • 1½ cups cauliflower rice, cooked & drained very well

  • ¾ cup sugar-free marinara or tomato sauce

  • 1 tsp Italian seasoning

  • ½ tsp paprika

  • Salt & pepper to taste

  • 1 cup shredded mozzarella cheese

  • 1 cup shredded cheddar or Monterey Jack

  • Optional: fresh parsley or basil


Instructions

  1. Preheat oven to 375°F (190°C).

  2. Brown meat in a large skillet with onion and garlic. Drain excess fat.

  3. Add bell peppers and cook 3–4 minutes until slightly tender.

  4. Stir in marinara, cauliflower rice, Italian seasoning, paprika, salt & pepper.

  5. Transfer mixture to a greased casserole dish.

  6. Top evenly with cheeses.

  7. Bake uncovered for 20–25 minutes until bubbly and lightly golden.

  8. Rest 5 minutes, garnish, and serve.


Tips

  • Want it spicy? Add red pepper flakes or diced jalapeños.

  • Prefer softer peppers? Sauté them a few extra minutes.

  • Extra cheesy? Add cream cheese (2–3 oz) to the meat mixture.
