Ingredients (4 mini loaves)

  • 1 lb ground chicken

  • ½ cup almond flour

  • ½ cup grated Parmesan cheese

  • 1 large egg

  • 3 cloves garlic, minced

  • 1 tsp Italian seasoning

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp paprika

  • Salt & black pepper, to taste

  • 2 tbsp olive oil or melted butter

Garlic Parmesan Topping

  • 2 tbsp butter, melted

  • ¼ cup grated Parmesan

  • 1 tsp garlic powder

  • 1 tbsp chopped parsley (optional)


Instructions

  1. Preheat oven to 375°F (190°C). Grease or line a baking dish.

  2. In a bowl, combine ground chicken, almond flour, Parmesan, egg, garlic, seasonings, and olive oil.

  3. Mix gently until just combined.

  4. Shape into 4 mini loaves and place in the dish.

  5. Bake for 20 minutes.

  6. Mix topping ingredients. Remove loaves, brush generously on top.

  7. Return to oven and bake 10–15 minutes more until internal temp reaches 165°F (74°C).

  8. Broil 1–2 minutes for a golden crust (optional).
