🥒 Keto Creamy Cucumber Sandwiches

Ingredients (10–12 mini sandwiches)

  • 1 large English cucumber

  • 4 oz cream cheese, softened

  • 2 tbsp mayonnaise (sugar-free)

  • 1 tbsp fresh dill, finely chopped (or 1 tsp dried)

  • ½ tsp garlic powder

  • Salt & black pepper, to taste

  • 1 tsp lemon juice (optional)

Optional add-ins

  • Chopped chives or parsley

  • Smoked salmon

  • Cracked red pepper


Instructions

  1. Slice cucumber into ¼-inch thick rounds.

  2. Lightly sprinkle with salt and let sit 5 minutes; pat dry.

  3. In a bowl, mix cream cheese, mayo, dill, garlic powder, lemon juice, salt & pepper until smooth.

  4. Spread or pipe mixture onto a cucumber slice.

  5. Top with another cucumber slice to form a “sandwich”.

  6. Chill 10–15 minutes before serving for best flavor.

  • Use English or Persian cucumbers (less watery).
