Ingredients (Serves 4)

2 large chicken breasts (halved lengthwise)

Salt & black pepper, to taste

1 tsp garlic powder

1 tsp Italian seasoning

1 cup grated Parmesan cheese

½ cup almond flour

1 egg, beaten

½ cup sugar-free marinara sauce
-
1 cup shredded mozzarella cheese

2 tbsp olive oil (for frying)

Fresh basil or parsley (optional)
Instructions

Prep the chicken
Pound chicken breasts to even thickness. Season with salt, pepper, garlic powder, and Italian seasoning. -
Bread the chicken

Mix Parmesan and almond flour in a bowl.

Dip chicken into beaten egg, then coat well in the Parmesan mixture.

Pan-fry
Heat olive oil in a skillet over medium heat.
Cook chicken 3–4 minutes per side until golden and crispy. -
Bake
Preheat oven to 400°F (200°C).

Bake for 12–15 minutes until cheese is melted and bubbly. -
