Keto Buttermilk Biscuits

  • ½ tsp xanthan gum (optional, but helps texture)

  • ¼ cup cold butter, cubed

  • ¾ cup keto buttermilk (see below)

  • 1 large egg

Keto Buttermilk

  • ¾ cup unsweetened almond milk

  • 1 tbsp lemon juice or apple cider vinegar


Instructions

  1. Preheat oven:
    Preheat to 375°F (190°C). Line a baking sheet with parchment paper.

  2. Make buttermilk:
    Mix almond milk with lemon juice. Let sit 5 minutes.

  3. Mix dry ingredients:
    In a bowl, whisk almond flour, coconut flour, baking powder, salt, and xanthan gum.

  4. Cut in butter:
    Add cold butter and cut in with fingers or pastry cutter until crumbly.

  5. Add wet ingredients:
    Stir in egg and buttermilk just until dough forms (don’t overmix).

  6. Shape biscuits:
    Scoop dough and shape into rounds. Place on baking sheet.

  7. Bake:
    Bake 15–18 minutes until golden on top.
