Here’s a Keto Taco Casserole that’s cheesy, hearty, and perfect for meal prep 🌮🧀


Keto Taco Casserole

Ingredients (Serves 6)

  • 1½ lb ground beef (or ground turkey)

  • 1 tbsp olive oil (if needed)

  • 1 small onion, finely chopped (optional for lower carbs)

  • 2 cloves garlic, minced

  • 2 tbsp taco seasoning (keto-friendly)

  • ½ cup sugar-free salsa or diced tomatoes

  • ¼ cup water or beef broth

  • 1 cup cauliflower rice (optional)

  • 1½ cups shredded cheddar or Mexican-blend cheese

  • ½ cup sour cream

  • 4 oz cream cheese, softened

  • Salt & pepper to taste

Toppings (Optional)

  • Diced avocado

  • Sliced jalapeños

  • Chopped cilantro

  • Extra cheese


Instructions

  1. Preheat oven:
    Preheat to 375°F (190°C). Grease a 9×13-inch baking dish.

  2. Cook meat:
    In a skillet over medium heat, cook ground beef with onion until browned. Drain excess grease.
    Add garlic and taco seasoning; cook 30 seconds.

  3. Simmer:
    Stir in salsa, broth, and cauliflower rice (if using). Simmer 3–5 minutes.

  4. Make creamy layer:
    Mix sour cream and cream cheese until smooth.

  5. Assemble casserole:
    Spread meat mixture in dish. Dollop creamy mixture over top and swirl lightly.
    Sprinkle cheese evenly.

  6. Bake:
    Bake 20–25 minutes until bubbly and cheese is melted.

  7. Rest & serve:
    Let rest 5 minutes before serving.

  • Serve over shredded lettuce for a taco-bowl feel

  • Stuff into low-carb tortillas
