Ingredients (Serves 6)

  • 2 tbsp butter

  • 2 cloves garlic, minced

  • 3 cups beef broth

  • 1½ cups heavy cream

  • 1 cup shredded cheddar cheese

  • 4 oz cream cheese, cubed

  • 1 cup cauliflower florets or riced cauliflower

  • ½ tsp paprika

  • ½ tsp mustard powder (or 1 tsp yellow mustard)

  • Salt & black pepper to taste

Toppings (Optional but Recommended)

  • Crumbled bacon

  • Extra shredded cheese

  • Diced pickles

  • Chopped green onions


Instructions

  1. Brown beef:
    In a large pot, cook ground beef over medium heat until browned. Drain excess grease.

  2. Sauté aromatics:
    Add butter, onion, and garlic. Cook until fragrant and soft.

  3. Simmer:
    Add beef broth, cauliflower, paprika, mustard, salt, and pepper. Simmer 10–15 minutes until cauliflower is tender.

  4. Make it creamy:
    Reduce heat to low. Stir in heavy cream and cream cheese until smooth.

  5. Add cheese:
    Gradually stir in cheddar until melted. Do not boil.

  6. Adjust seasoning:
    Taste and adjust salt and pepper.
