Ingredients

  • 2 cups shredded Oaxaca cheese
    (or mozzarella if unavailable)

  • 1 cup shredded Monterey Jack

  • 4 oz chorizo (or ground beef), cooked and drained

  • 1 tbsp butter or olive oil

  • 1 small jalapeño, finely diced (optional)

  • 2 tbsp onion, very finely minced (optional, keep keto)

  • 1 clove garlic, minced

  • ¼ tsp cumin

  • ¼ tsp smoked paprika

  • Salt to taste

Optional Toppings

  • Fresh cilantro, chopped

  • Diced avocado

  • Crushed pork rinds


Instructions

1. Cook the Meat

  1. Heat butter or oil in a skillet over medium heat.

  2. Add chorizo and cook until fully browned.

  3. Remove excess grease if needed.


2. Add Flavor

  1. Add onion and jalapeño; sauté 2–3 minutes.

  2. Stir in garlic, cumin, and smoked paprika.


3. Melt the Cheese

Oven Method (Best Texture)

  1. Preheat oven to 400°F (200°C).

  2. Transfer chorizo mixture to an oven-safe skillet.

  3. Top evenly with both cheeses.

  4. Bake 8–10 minutes until bubbly and melted.

Stovetop Method
