Ingredients

Taco Meat

  • 1 lb ground beef

  • 1 tbsp taco seasoning (keto / no sugar)

  • ¼ cup water


“Dorito” Crunch (Keto)

  • 1½ cups shredded cheddar cheese

  • ½ tsp chili powder

  • ¼ tsp smoked paprika

  • ¼ tsp garlic powder


Salad Base

  • 4 cups chopped romaine or iceberg lettuce

  • ½ cup diced tomatoes

  • ¼ cup diced red onion (optional)

  • ¼ cup sliced black olives (optional)


Creamy Taco Dressing

  • ½ cup sour cream

  • ¼ cup mayonnaise

  • 1 tbsp taco seasoning

  • 1 tbsp lime juice


Instructions

  1. Make Dorito Chips

    • Preheat oven to 400°F (205°C).

    • Drop tablespoon-size mounds of cheese on parchment.

    • Sprinkle with spices.

    • Bake 6–8 minutes until crispy. Cool & break into chips.

  2. Cook Taco Meat

    • Brown beef, drain fat.

    • Add taco seasoning + water; simmer 5 minutes.

  3. Make Dressing

    • Whisk all dressing ingredients until smooth.

  4. Assemble Salad

    • Toss lettuce with dressing.

    • Top with taco meat, veggies, and keto Dorito chips.
