🧁 Keto French Toast Muffins

Ingredients

  • 2 cups almond flour

  • ¼ cup sweetener (monk fruit or erythritol blend)

  • 1 tsp baking powder

  • ½ tsp cinnamon

  • Pinch of salt

  • 3 large eggs

  • ¼ cup melted butter or coconut oil

  • ¼ cup unsweetened almond milk

  • 1 tsp vanilla extract

Cinnamon “Sugar” Topping

  • 2 tbsp melted butter

  • 2 tbsp monk fruit sweetener

  • 1 tsp cinnamon

Optional

  • Sugar-free maple syrup for serving

  • Cream cheese glaze or powdered sweetener dusting


Instructions

  1. Preheat oven to 350°F (175°C). Line or grease a muffin tin.

  2. In a bowl, mix almond flour, sweetener, baking powder, cinnamon, and salt.

  3. In another bowl, whisk eggs, melted butter, almond milk, and vanilla.

  4. Combine wet and dry ingredients until smooth.

  5. Divide batter evenly into muffin cups (about ¾ full).

  6. Bake 18–22 minutes, until golden and set.

  7. Brush warm muffins with melted butter and sprinkle cinnamon sweetener on top.

  8. Let cool slightly and enjoy!
