Ingredients

1½ lbs boneless skinless chicken breast or thighs

1 tbsp olive oil or avocado oil
-
1 small onion, diced (optional for stricter keto)

3 cloves garlic, minced
-
1 green bell pepper, diced
-
1 red bell pepper, diced
-
1 jalapeño, minced (optional)
-
1 tbsp chili powder
-
1 tsp ground cumin
-
1 tsp smoked paprika
-
½ tsp oregano
-
½ tsp turmeric (detox + anti-inflammatory)

Salt & black pepper, to taste

6 cups chicken broth (low sodium)
-
1 cup diced tomatoes (optional, keep keto portions small)

1 cup zucchini, chopped
-
½ cup fresh cilantro, chopped
-
Juice of 1 lime
Optional Add-Ins

½ cup cauliflower rice
-
¼ tsp cayenne pepper

½ tsp ginger
Instructions

Heat oil in a large pot over medium heat.

Add onion (if using) and cook until soft, about 2–3 minutes.

Add garlic, bell peppers, and jalapeño. Cook 1 minute.

Stir in chili powder, cumin, paprika, oregano, turmeric, salt, and pepper.

Add chicken and broth. Bring to a gentle boil.

Reduce heat and simmer 20–25 minutes, until chicken is cooked.

Remove chicken, shred it, and return to pot.

Add zucchini and cauliflower rice (if using). Simmer 5 minutes.

Stir in lime juice and cilantro. Taste and adjust seasoning.
