Ingredients (4 servings)

Chicken

  • 2 large chicken breasts, sliced horizontally into cutlets

  • Salt & black pepper to taste

  • ½ tsp garlic powder

  • ½ tsp paprika

Keto Breading

  • ¾ cup finely crushed pork rinds

  • ½ cup grated parmesan cheese

  • 1 tsp Italian seasoning

  • ½ tsp garlic powder

Egg Wash

  • 2 large eggs

For Frying

  • Avocado oil or olive oil


Instructions

  1. Prepare Chicken

    • Pat cutlets dry.

    • Season both sides with salt, pepper, garlic powder, and paprika.

  2. Set Up Breading Station

    • Bowl 1: beaten eggs

    • Bowl 2: pork rinds, parmesan, Italian seasoning, garlic powder

  3. Bread the Cutlets

    • Dip chicken into egg, then press firmly into breading mixture.

  4. Fry Until Crispy

    • Heat oil in skillet over medium heat.

    • Fry cutlets 3–4 minutes per side until golden and cooked through.

    • Drain briefly on paper towels.


Optional Oven Method
