Ingredients (6–8 pastries)

Keto Pastry Dough (Fathead)

  • 1½ cups shredded mozzarella cheese

  • 2 tbsp cream cheese

  • ¾ cup almond flour

  • 1 tsp baking powder

  • 1 large egg

Cheeseburger Filling

  • 1 lb ground beef (80/20)

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • 1 tsp mustard (optional)

  • ½ cup shredded cheddar cheese

  • 2 tbsp sugar-free ketchup (optional)

  • Chopped pickles (optional)

Topping

  • 1 tbsp melted butter

  • Sesame seeds (optional)


Instructions

1️⃣ Make the Dough

  • Microwave mozzarella and cream cheese together in 30-second bursts until fully melted.

  • Stir in almond flour and baking powder.

  • Add egg and mix until a smooth dough forms.

  • Let rest 5 minutes.

2️⃣ Cook Filling

  • Brown ground beef in a skillet over medium heat.

  • Season with salt, pepper, garlic powder, onion powder, and mustard.

  • Drain excess fat.

  • Stir in ketchup, pickles, and cheddar. Cool slightly.

3️⃣ Assemble Pastries

  • Roll dough between parchment into a thin rectangle.

  • Cut into squares.

  • Add filling to center, fold into triangles or rectangles, and seal edges.

4️⃣ Bake

  • Place on lined baking sheet.

  • Brush tops with melted butter and sprinkle sesame seeds.
