Bread in a Jar (No White Flour, No Yeast, No Sugar)
3 eggs
1 cup (240 ml) milk (dairy or unsweetened plant milk)
2 tbsp flax seeds (ground works best)
2 tbsp psyllium husk
½ tsp salt
½ tsp baking powder (important for rise)
Optional (but tasty):
1 tbsp olive oil or melted butter
Pinch of garlic powder or herbs
Mix
In a bowl, whisk eggs and milk until smooth.
Add flax seeds, psyllium, salt, and baking powder.
Mix well and let sit 1 minute to thicken.
Jar it
Lightly grease a microwave-safe glass jar or mug.
Pour batter in, filling no more than halfway (it rises).
Microwave
Microwave on high for 60–90 seconds.
Check center — if wet, add 10–15 seconds more.
Rest
Let sit 1 minute, then loosen edges with a knife and turn out (or eat straight from the jar
).
Psyllium = structure (don’t skip it)
Ground flax gives a softer crumb
Too dense? Add 1–2 tbsp milk
Too wet? Add ½ tbsp psyllium
Slice & toast lightly
Top with avocado, eggs, or cheese
Use as sandwich bread
Dip in olive oil or soup
