Caramelized Sweet Potatoes with Maple, Feta & Crunchy Walnuts,
Ingredients:
3 medium sweet potatoes, peeled and cut into cubes
2 tablespoons olive oil
2 tablespoons pure maple syrup
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper
1/2 cup crumbled feta cheese
1/3 cup walnuts, toasted and roughly chopped
2 tablespoons fresh parsley, chopped (for garnish)
Directions:
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, toss the sweet potato cubes with olive oil, maple syrup, cinnamon, nutmeg, salt, and black pepper until evenly coated.
Spread the sweet potatoes in a single layer on the prepared baking sheet.
Roast for 25–30 minutes, flipping halfway, until tender and caramelized on the edges.
Remove from the oven and transfer to a serving dish.
Sprinkle with feta cheese and toasted walnuts.
Garnish with fresh parsley and serve warm.
