Chicken Spinach & Mushroom Low-Carb Oven Dish

Ingredients

  • 2 lb (900 g) chicken breast or thighs, cubed

  • 2 tbsp olive oil or butter

  • 8 oz (225 g) mushrooms, sliced

  • 3 cups fresh spinach

  • 3 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup chicken broth

  • 1 cup shredded mozzarella or Swiss cheese

  • ½ cup grated Parmesan

  • 1 tsp Italian seasoning

  • ½ tsp paprika

  • Salt & black pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.

  2. Sauté vegetables:
    Heat oil in a skillet. Cook mushrooms until golden. Add garlic and spinach; cook until wilted.

  3. Season chicken:
    Toss chicken with salt, pepper, paprika, and Italian seasoning.

  4. Assemble:
    Spread chicken in baking dish. Top with mushroom-spinach mixture.

  5. Make sauce:
    Mix cream and broth. Pour evenly over chicken.

  6. Add cheese:
    Sprinkle mozzarella and Parmesan on top.

  7. Bake uncovered for 30–35 minutes, until bubbly and chicken is cooked through.

  8. Rest 5 minutes before serving.


Optional Add-Ins

  • Sun-dried tomatoes (sugar-free)

  • Cream cheese (2–3 tbsp for extra richness)

  • Red pepper flakes for heat
