🛒 Ingredients (Makes 8–10 servings)
Cake / Base

1 cup whole wheat flour

Blueberry Filling

1½ cups fresh or frozen blueberries

1–2 tbsp sweetener (or sugar-free syrup)

1 tsp lemon juice

Optional thickener: 1 tsp chia seeds or ½ tsp arrowroot powder
Frosting / Topping

½ cup light cream cheese

½ cup nonfat Greek yogurt

½ scoop vanilla whey protein

2–3 tbsp powdered sweetener

1 tsp vanilla extract

Preheat oven to 175°C (350°F). Grease a 9×9-inch baking pan.

Mix dry ingredients: Whole wheat flour, oat flour, protein powder, baking powder, baking soda, and salt.

Mix wet ingredients: Eggs, Greek yogurt, applesauce, sweetener, and vanilla.

Combine wet and dry ingredients until smooth and pour into prepared pan. Bake 18–22 minutes (toothpick comes out mostly clean). Cool completely.

Prepare blueberry filling: In a small saucepan, combine blueberries, sweetener, lemon juice, and optional thickener. Simmer 5 minutes until slightly thickened. Let cool.

Make frosting: Beat cream cheese and Greek yogurt until smooth. Add protein powder, sweetener, and vanilla.

Assemble: Spread frosting over cooled cake. Spoon blueberry filling over top and swirl slightly. Garnish with extra blueberries or coconut.
