🥚 Cottage Cheese & Spinach Crustless Keto Quiche

Ingredients (6 slices)

  • 6 large eggs
  • 1 cup cottage cheese (full-fat for best keto texture)
  • ½ cup shredded mozzarella (or Swiss/cheddar)
  • 1 cup fresh spinach, chopped
    (or ½ cup thawed frozen spinach, drained well)
  • ¼ cup heavy cream
  • ½ small onion, finely diced (optional — can skip for fewer carbs)
  • 1–2 cloves garlic, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp nutmeg (optional but very good with spinach)
  • ½ cup cooked bacon or sausage, chopped (optional but keto-friendly)

Instructions

1. Prep oven

Preheat oven to 350°F (175°C). Grease a pie dish or small baking dish.

2. Sauté aromatics

In a pan, lightly cook onion (if using) and garlic in a little butter until soft.
Add spinach and cook just until wilted.
Let cool slightly.

3. Mix the custard

In a large bowl, whisk together:

  • Eggs
  • Cottage cheese
  • Heavy cream
  • Mozzarella
  • Salt, pepper, nutmeg

Stir in the cooked spinach mixture and optional bacon/sausage.

4. Pour & bake

Pour mixture into the greased baking dish.
Bake 35–40 minutes, until the center is set and the top is lightly golden.

5. Cool & slice

Let rest 5–10 minutes before slicing (helps it set).
