🧀 Crispy Keto Chicken Quesadillas

Ingredients (2–3 servings)

For the chicken:

  • 2 cups cooked chicken breast, shredded or diced

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp smoked paprika

  • ¼ tsp chili powder (optional)

  • Salt & pepper to taste

  • 1 tbsp olive oil or butter

For the quesadillas:

  • 2 cups shredded mozzarella or Mexican blend (low-carb friendly)

  • ½ cup shredded cheddar cheese

  • 2 tbsp cream cheese (optional, extra creamy)

  • 1–2 tbsp butter or avocado oil (for crisping)

Optional add-ins (keto-friendly):

  • Diced jalapeños

  • Chopped green onions

  • A few thin bell pepper slices


Instructions

  1. Season & Crisp the Chicken

    • Heat olive oil in a skillet over medium heat.

    • Add chicken, garlic powder, onion powder, paprika, chili powder, salt, and pepper.

    • Cook 3–5 minutes until lightly crispy. Remove and set aside.

  2. Create the Cheese “Tortilla”

    • In a non-stick skillet over medium-low heat, sprinkle ½ cup shredded cheese into a circle.

    • Let melt and bubble until edges turn golden.

  3. Fill the Quesadilla

    • Add chicken, cream cheese (if using), and any add-ins over half the cheese circle.

    • Sprinkle a little extra cheese on top of the filling.

  4. Fold & Crisp

    • Carefully fold in half using a spatula.

    • Cook 1–2 minutes per side until golden brown and crispy.

  5. Repeat

    • Make remaining quesadillas the same way.
