  • 1 cup cottage cheese

  • Β½ cup plain Greek yogurt

  • Β½ cup shredded cheddar (reduced-fat or regular)

  • 3 eggs

  • 2 tbsp chopped green onions or chives

  1. Preheat oven to 425Β°F (220Β°C). Line a sheet pan with parchment.

  2. Toss potatoes with olive oil, garlic powder, paprika, salt, and pepper.

  4. Roast 25–30 minutes until potatoes are golden and bacon is crispy.

  5. Stir the pan once halfway for even crisping.

  6. Make 3–4 small wells between the potatoes. Crack an egg into each well.

  7. Sprinkle cheddar over everything.

  8. Return to oven 6–8 minutes until egg whites set.

  9. Mix cottage cheese and Greek yogurt until creamy.

  10. Remove pan, top with the creamy mixture and green onions.
