Easy Chocolate Chip Cookies (High-Protein)

Ingredients (Makes ~12 cookies)

  • 1 cup oat flour (or blended oats)

  • ¼ cup vanilla protein powder

  • ¼ tsp baking soda

  • Pinch salt

  • ¼ cup melted butter or coconut oil

  • ⅓ cup brown sugar (or coconut sugar)

  • ¼ cup plain non-fat Greek yogurt

  • 1 large egg

  • 1 tsp vanilla extract

  • ⅓ cup dark chocolate chips (70%+)


Instructions

  1. Preheat oven to 175°C (350°F). Line a tray with parchment.

  2. Dry mix: Oat flour, protein powder, baking soda, salt.

  3. Wet mix: Butter, sugar, Greek yogurt, egg, vanilla until smooth.

  4. Combine wet + dry. Fold in chocolate chips. Dough will be soft.

  5. Scoop 12 mounds onto tray; lightly flatten.

  6. Bake 9–11 minutes until edges set and centers look slightly soft.

  7. Cool 10 minutes (they firm up as they cool).
