Easy Chocolate Chip Cookies (High-Protein)

Ingredients (Makes ~12 cookies)

1 cup oat flour (or blended oats)

¼ cup vanilla protein powder

¼ tsp baking soda

Pinch salt

¼ cup melted butter or coconut oil

⅓ cup brown sugar (or coconut sugar)

¼ cup plain non-fat Greek yogurt

1 large egg

1 tsp vanilla extract

⅓ cup dark chocolate chips (70%+)
Instructions

Preheat oven to 175°C (350°F). Line a tray with parchment.

Dry mix: Oat flour, protein powder, baking soda, salt.

Wet mix: Butter, sugar, Greek yogurt, egg, vanilla until smooth.

Combine wet + dry. Fold in chocolate chips. Dough will be soft.

Scoop 12 mounds onto tray; lightly flatten.

Bake 9–11 minutes until edges set and centers look slightly soft.

Cool 10 minutes (they firm up as they cool).
