Garlic Butter Steak and Potatoes (High-Protein)

Juicy seared steak bites with crispy potatoes, finished in garlicky butter—big flavor, protein-forward.

Ingredients (Serves 4)

  • 680 g (1.5 lb) sirloin steak, cut into bite-size cubes

  • 700 g baby potatoes, halved

  • 1 tbsp olive oil

  • 2 tbsp butter

  • 5 cloves garlic, minced

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp paprika

  • 1 tsp dried thyme or rosemary

  • Fresh parsley, chopped (optional)

Instructions

  1. Parboil potatoes
Boil potatoes in salted water 8–10 minutes until just fork-tender. Drain and steam-dry 5 minutes.

  2. Crisp potatoes
Heat olive oil in a large skillet over medium-high. Add potatoes cut-side down. Cook 8–10 minutes until deeply golden. Season with half the salt, pepper, paprika, and herbs. Remove.

  3. Sear steak
In the same hot skillet, add steak in a single layer. Sear 2–3 minutes without stirring for a crust. Flip and cook 1–2 more minutes.

  4. Garlic butter finish
Lower heat. Add butter and garlic; toss steak 30–45 seconds until fragrant.

  5. Combine
Return potatoes to the pan. Toss everything together 1 minute. Sprinkle parsley and serve.

High-Protein Tips

  • Use sirloin or strip steak for a leaner, high-protein cut.

  • Don’t overcrowd the pan—good sear = better flavor without extra fat.

  • Add a side of plain Greek yogurt with lemon and salt as a dip for extra protein.
