High-Protein Brownie Cookies

🍫 High-Protein Brownie Cookies

Fudgy like a brownie, chewy like a cookie — but packed with protein. Perfect for a sweet treat that actually keeps you full!

📝 Ingredients (Makes 12 cookies)

  • 1 cup chocolate protein powder (whey-casein blend works best)

  • ¼ cup unsweetened cocoa powder

  • ½ cup almond flour

  • ½ tsp baking powder

  • Pinch of salt

  • 1 large egg

  • ¼ cup Greek yogurt (plain, nonfat or 2%)

  • ⅓ cup sugar-free sweetener (or coconut sugar)

  • 2 tbsp melted butter or coconut oil

  • 1 tsp vanilla extract

  • 2–3 tbsp almond milk (as needed)

  • ¼ cup dark chocolate chips (sugar-free if desired)

👩‍🍳 Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a bowl, whisk together protein powder, cocoa powder, almond flour, baking powder, and salt.

  3. In another bowl, mix egg, Greek yogurt, sweetener, melted butter, and vanilla.

  4. Combine wet and dry ingredients. Add almond milk gradually until thick brownie-style batter forms.

  5. Fold in chocolate chips.

  6. Scoop onto baking sheet (slightly flatten — they don’t spread much).

  7. Bake 8–10 minutes until edges are set but centers are soft.

  8. Cool completely (they firm up as they cool).

💡 Tips for Best Texture

  • Don’t overbake — slightly underbaked = fudgier.

  • If using plant protein, add 1 extra tbsp yogurt for moisture.

  • For extra gooey cookies, press a few chocolate chips on top before baking.
