🛒 Ingredients (Serves 6)

2 lbs (900g) cooked chicken breast, shredded or cubed

10 oz frozen spinach, thawed & squeezed dry

1 cup low-fat cottage cheese

½ cup plain nonfat Greek yogurt

¾ cup reduced-fat mozzarella cheese (shredded)

¼ cup grated Parmesan

2 cloves garlic, minced

½ tsp onion powder
-
½ tsp black pepper
-
½ tsp salt

Optional: 1 scoop unflavored collagen peptides

Optional: ½ tsp red pepper flakes
🔥 Instructions
1️⃣ Preheat oven to 375°F (190°C). Lightly grease a 9×13 baking dish.
2️⃣ Make creamy base:
Blend cottage cheese until smooth (for extra creaminess).
In a large bowl, mix cottage cheese, Greek yogurt, garlic, seasonings, and collagen (if using).
3️⃣ Combine:
Fold in chicken and well-drained spinach.
Stir in half the mozzarella.
4️⃣ Bake:
Spread mixture into baking dish.
Top with remaining mozzarella and Parmesan.
Bake 25–30 minutes until bubbly and golden.
5️⃣ Rest 5–10 minutes before serving to help it set.
