High-Protein Mini Cinnamon Roll French Toast

🌀 High-Protein Mini Cinnamon Roll French Toast

📝 Ingredients

French Toast Bites

  • 4 slices high-protein or whole-grain bread

  • 3 eggs

  • ½ cup cottage cheese

  • 1 scoop vanilla protein powder

  • ½ cup unsweetened almond milk

  • 1 tsp vanilla extract

  • 1 tsp cinnamon

  • 1 tbsp sugar-free syrup or maple syrup

Cinnamon Swirl

  • 1 tbsp melted butter or coconut oil

  • 1 tbsp sugar-free brown sugar or coconut sugar

  • 1 tsp cinnamon

Cream Cheese Glaze

  • 2 tbsp light cream cheese, softened

  • 2 tbsp Greek yogurt

  • 1–2 tbsp almond milk

  • 1 tbsp sugar-free syrup or honey

  • Dash vanilla


👩‍🍳 Instructions

  1. Cut bread into bite-size cubes.

  2. In a blender, blend eggs, cottage cheese, protein powder, almond milk, vanilla, cinnamon, and syrup until smooth.

  3. Toss bread cubes in the mixture and let soak 2–3 minutes.

  4. Mix cinnamon swirl ingredients in a small bowl.

  5. Heat a non-stick pan over medium. Add soaked bread cubes.

  6. Drizzle the cinnamon swirl over the top while cooking.

  7. Cook 6–8 minutes, turning gently, until golden and slightly crisp.

  8. Whisk glaze ingredients until smooth. Drizzle over warm bites.
