Ingredients
𼣠For the crust:
- 1 ½ cups crushed whole-grain or oat biscuits (or almond flour for gluten-free)
- 3 tbsp extra virgin olive oil or melted coconut oil
- 1 tbsp honey or pure maple syrup
đ° For the cheesecake filling:
- 8 oz (225 g) light cream cheese or Neufchâtel cheese, softened
- 1 cup plain Greek yogurt (2% or nonfat)
- 1 scoop (25â30 g)Â vanilla or unflavored protein powder
- 2 tbsp honey, agave, or maple syrup (to taste)
- 1 tsp pure vanilla extract
- Juice of ½ lemon (for brightness)
- 1 tsp lemon zest (optional)
đŤ For the blueberry sauce:
- 1 cup fresh or frozen blueberries
- 1 tbsp honey or maple syrup
- 1 tsp lemon juice
- 1 tsp cornstarch or arrowroot powder mixed with 1 tbsp water
Instructions
1. Make the crust:
- Mix crushed biscuits (or almond flour) with olive oil and honey until crumbly.
- Press evenly into the bottom of a 7â8 inch springform pan or small dish.
- Chill in the fridge while you prepare the filling.
2. Prepare the filling:
- In a bowl, beat cream cheese until smooth.
- Add Greek yogurt, protein powder, honey, vanilla, and lemon juice.
- Mix until creamy and well combined.
- Spread over the chilled crust and smooth the top.
- Refrigerate for 4â6 hours (or overnight) until set.
3. Make the blueberry sauce:
- In a small saucepan, combine blueberries, honey, and lemon juice.
- Heat over medium until blueberries start to release juice.
- Stir in cornstarch slurry and cook for 1â2 minutes until thickened.
- Let cool completely, then spoon over the chilled cheesecake.
4. Serve & Enjoy:
- Slice and top with extra fresh blueberries or mint leaves if desired.
