Ingredients (12–16 pieces)

  • 4 oz cream cheese, softened

  • ¼ cup unsalted butter, softened

  • ⅓ cup powdered erythritol or monk fruit sweetener

  • ½ tsp bubblegum flavoring (sugar-free)

  • ½ tsp vanilla extract

  • Pinch of salt

  • ½ cup sugar-free white chocolate chips, melted
    (or cocoa butter for cleaner keto)

  • ¼ cup heavy whipping cream, whipped to soft peaks

  • Pink food coloring (optional)


Instructions

  1. In a bowl, beat cream cheese and butter until smooth and fluffy.

  2. Add powdered sweetener, bubblegum flavoring, vanilla, and salt. Beat well.

  3. Mix in melted white chocolate until fully combined.

  4. Gently fold in whipped cream to create a light, cloud-like texture.

  5. Add a drop or two of pink food coloring if desired.

  6. Spread into a parchment-lined loaf pan.

  7. Chill for 2–3 hours until firm.

  8. Slice into squares and serve cold.


Tips for Best Texture

  • Powder your sweetener finely to avoid graininess

  • Don’t over-fold the whipped cream

  • Chill fully before cutting
