🥣 Keto Cauliflower & Hamburger Soup

Ingredients (4–6 servings)

  • 1 lb ground beef (80/20 works best)

  • 1 tbsp olive oil or butter

  • 1 small onion, finely diced (optional for strict keto)

  • 3 cloves garlic, minced

  • 1 medium head cauliflower, chopped into florets

  • 4 cups beef broth

  • 1 cup heavy cream

  • 1½ cups shredded cheddar cheese

  • 4 oz cream cheese, cubed

  • 1 tsp paprika

  • ½ tsp Italian seasoning

  • Salt & pepper, to taste

  • Optional toppings: bacon bits, green onions, extra cheese


Instructions

  1. Brown beef in a large pot over medium heat with oil or butter. Season with salt & pepper. Drain excess grease.

  2. Add onion (if using) and cook 2–3 minutes until soft. Stir in garlic and cook 30 seconds.

  3. Add cauliflower, broth, paprika, and Italian seasoning. Bring to a boil.

  4. Reduce heat, cover, and simmer 12–15 minutes until cauliflower is very tender.

  5. Stir in cream cheese until melted.

  6. Add heavy cream and cheddar, stirring until smooth and creamy.

  7. Adjust seasoning and simmer 2–3 minutes more.
