Ingredients (Serves 2)

  • ½ lb (225 g) ground beef (80/20 works best)

  • Salt & black pepper, to taste

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • 2 large low-carb tortillas or cheese tortillas

  • 1½ cups shredded cheddar or American-style cheese

  • 2 tbsp diced onion (optional)

  • 2 tbsp dill pickle slices, chopped

  • Butter or beef tallow, for cooking

Optional Big-Mac–style sauce

  • 2 tbsp sugar-free mayo

  • 1 tbsp sugar-free ketchup

  • 1 tsp yellow mustard

  • 1 tsp pickle relish (no sugar)

  • Pinch paprika


Instructions

  1. Season beef: Divide beef into 2 balls. Season with salt, pepper, garlic powder, and onion powder.

  2. Smash cook: Heat a skillet over medium-high with a little butter or tallow. Place beef ball in pan and smash thin. Cook 2–3 minutes per side until crispy.

  3. Assemble quesadilla:

    • Lay tortilla in a clean skillet on low heat.

    • Sprinkle cheese over half the tortilla.

    • Add smashed burger, onions, pickles, and sauce (if using).

    • Top with more cheese and fold tortilla over.

  4. Crisp: Cook 2–3 minutes per side until golden and cheese is melted.

  5. Slice & serve hot.
