½ cup sugar-free salsa or diced tomatoes

¼ cup water or beef broth

1 cup cauliflower rice (optional)

1½ cups shredded cheddar or Mexican-blend cheese

½ cup sour cream

4 oz cream cheese, softened

Salt & pepper to taste

Instructions

Preheat oven:
Preheat to 375°F (190°C). Grease a 9×13-inch baking dish. -
Cook meat:
In a skillet over medium heat, cook ground beef with onion until browned. Drain excess grease.
Add garlic and taco seasoning; cook 30 seconds. -
Simmer:
Stir in salsa, broth, and cauliflower rice (if using). Simmer 3–5 minutes. -
Make creamy layer:
Mix sour cream and cream cheese until smooth. -
Assemble casserole:
Spread meat mixture in dish. Dollop creamy mixture over top and swirl lightly.
Sprinkle cheese evenly. -
Bake:
Bake 20–25 minutes until bubbly and cheese is melted. -
