🍋 Lemon Raspberry High-Protein Muffins

✅ Ingredients (Makes 12 muffins)

Dry Ingredients

  • 1 cup oat flour (or blended oats)

  • ½ cup vanilla whey protein powder

  • ¼ cup almond flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • Pinch of salt

Wet Ingredients

  • 2 large eggs

  • ½ cup plain Greek yogurt (0–2%)

  • ¼ cup honey or maple syrup

  • 2 tbsp melted coconut oil or light butter

  • Zest of 1 lemon

  • 3 tbsp fresh lemon juice

  • 1 tsp vanilla extract

Add-ins

  • ¾ cup fresh raspberries (or frozen, not thawed)


👩‍🍳 Instructions

  1. Preheat oven to 175°C (350°F). Line a 12-cup muffin tin with liners.

  2. In a bowl, whisk together all dry ingredients.

  3. In another bowl, whisk eggs, yogurt, honey, oil, lemon zest, lemon juice, and vanilla.

  4. Combine wet and dry ingredients gently — do not overmix.

  5. Fold in raspberries carefully.

  6. Divide batter evenly into muffin cups (about ¾ full).

  7. Bake 18–22 minutes until a toothpick comes out clean.

  8. Cool 10 minutes before removing from pan.
