Mexican White Trash Casserole

Here’s a Keto Mexican White Trash Casserole — cheesy, hearty, and very low-carb 🌮🧀
(No tortillas, no chips, no sugar)


🌮 Keto Mexican White Trash Casserole

Ingredients

  • 1 lb ground beef (or ground turkey)

  • 1 tbsp olive oil (if needed)

  • 1 small onion, finely chopped (optional)

  • 2 cloves garlic, minced

  • 1 packet keto-friendly taco seasoning
    (or 1½ tbsp homemade – no sugar)

  • ½ cup sugar-free salsa

  • 1 cup cauliflower rice, cooked & drained well

  • 1 cup shredded cheddar cheese

  • 1 cup shredded Monterey Jack (or mozzarella)

  • 4 oz cream cheese, cubed

  • ¼ cup sour cream

  • Salt & pepper to taste

Optional toppings

  • Sliced jalapeños

  • Green onions

  • Black olives (small amount)

  • Fresh cilantro


Instructions

  1. Preheat oven to 375°F (190°C).

  2. Brown beef in skillet with onion and garlic until fully cooked. Drain excess fat.

  3. Season with taco seasoning and stir in salsa.

  4. Mix in cream cheese and sour cream until creamy.

  5. Add cauliflower rice, salt & pepper, and mix well.

  6. Transfer to casserole dish and top with shredded cheeses.

  7. Bake uncovered for 20–25 minutes until bubbly and golden.

  8. Rest 5 minutes, add toppings, and serve.


Tips

  • Want it spicy? Add diced jalapeños or hot salsa.

  • Extra cheesy? Add another ½ cup cheese on top.

  • Make it Tex-Mex by adding a little smoked paprika & cumin.
