Oven-Baked Meatloaf and Potatoes (High-Protein)
A hearty, classic comfort meal made leaner and protein-packed without losing flavor. Perfect for a family dinner or weekly meal prep.
Ingredients (Serves 6)
Meatloaf

900 g (2 lb) lean ground beef (90–93% lean)

1 cup low-fat cottage cheese

2 large eggs

½ cup quick oats (or oat flour)

1 small onion, very finely diced

3 cloves garlic, minced
-
2 tbsp ketchup (no-sugar if preferred)

1 tbsp Worcestershire sauce

1 tsp salt
-
1 tsp black pepper
-
1 tsp paprika
-
1 tsp dried parsley
Potatoes

700 g baby potatoes, halved

1 tbsp olive oil
-
1 tsp garlic powder
-
1 tsp paprika

Salt & pepper to taste
Glaze

¼ cup ketchup (no-sugar if preferred)

1 tbsp mustard
-
1 tbsp honey or sugar-free syrup
Instructions

Preheat oven to 200°C (400°F). Line a large baking tray with parchment.

Season potatoes: Toss potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread on one side of the tray.

Mix meatloaf: In a large bowl, combine ground beef, cottage cheese, eggs, oats, onion, garlic, ketchup, Worcestershire, and spices. Mix just until combined.

Shape loaf: Form into a firm loaf and place on the other side of the tray.

Add glaze: Stir glaze ingredients and brush over the top of the meatloaf.

Bake 40–50 minutes, until meatloaf reaches 71°C (160°F) internally and potatoes are tender and golden. Flip potatoes halfway.

Rest meatloaf 8–10 minutes before slicing.
