Soft, nutty, buttery cookies coated in powdered sweetener — a protein-packed twist on the classic “snowball” cookie. Perfect for snacks or dessert without derailing macros.


🛒 Ingredients (Makes ~12 cookies)

  • 1 cup almond flour

  • ½ cup pecans, finely chopped

  • ¼ cup protein powder (vanilla or unflavored)

  • 2 tbsp coconut flour

  • ¼ cup butter or coconut oil, softened

  • 2–3 tbsp powdered sweetener (erythritol, monk fruit, or preferred)

  • 1 tsp vanilla extract

  • Pinch of salt

  • Optional: additional sweetener or protein powder for rolling


🔥 Instructions

1️⃣ Preheat oven
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

2️⃣ Mix dough
In a bowl, combine almond flour, chopped pecans, protein powder, coconut flour, salt, and sweetener.
Add butter and vanilla. Mix until dough forms.

3️⃣ Shape cookies
Roll dough into 12 small balls (~1½ inches). Place on baking sheet.

4️⃣ Bake
Bake 12–15 minutes until edges are lightly golden.

5️⃣ Coat cookies
While warm, roll cookies in powdered sweetener or protein powder mixed with a little sweetener for the “snowball” effect. Cool completely.
