Pico de Gallo (High-Protein Boost)

Fresh, zesty salsa with a simple protein upgrade that keeps the classic flavor.

Ingredients (Serves ~4)

  • 3 ripe tomatoes, finely diced (seeds removed)

  • ½ small red onion, very finely diced

  • 1 jalapeño, minced (seeds removed for less heat)

  • ¼ cup fresh cilantro, chopped

  • Juice of 1 lime

  • ¼ tsp salt (or to taste)

High-Protein Add-In (optional but recommended)

  • ½ cup plain non-fat Greek yogurt or small-curd cottage cheese, very finely chopped


Instructions

  1. Combine tomatoes, onion, jalapeño, cilantro, lime juice, and salt.

  2. Let sit 10 minutes to release juices.

  3. Fold in Greek yogurt (or finely chopped cottage cheese) just before serving.

  4. Chill 20–30 minutes for best flavor.
