Sticky Beef Noodles (High Protein)

Ingredients

  • 1 lb lean ground beef (93–96%) or flank steak, thin-sliced

  • 8 oz high-protein noodles

    • edamame noodles

    • chickpea pasta

    • protein ramen / konjac noodles

  • 1 tbsp sesame oil

  • 3 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

Sticky Sauce

  • ΒΌ cup low-sodium soy sauce or coconut aminos

  • 2 tbsp hoisin (or sugar-free hoisin for lower carbs)

  • 1 tbsp rice vinegar

  • 1–2 tbsp monk fruit sweetener or honey

  • 1 tbsp cornstarch

    • swap for xanthan gum (ΒΌ tsp) if low-carb

Optional protein boost

  • Β½ cup egg whites (stirred in at end)

  • or extra beef


Instructions

  1. Cook noodles per package, drain, set aside.

  2. Brown beef in sesame oil over medium-high heat. Drain excess fat if needed.

  3. Add garlic & ginger, cook 30 seconds.

  4. Mix sauce ingredients, pour into pan.

  5. Simmer 2–3 minutes until thick and glossy.

  6. Toss noodles in sauce until coated.

  7. Stir in egg whites (if using) and cook 1 minute until set.
